​Create a selection of first courses from the Mediterranean using Mary Valley Produce under the guidance of our GourMay ambassador Matt Golinski

Matt will take you on a food journey where you’ll get to both learn from the best and get to take away some new skills to impress your friends. You’ll also get to enjoy lunch with Matt.

Week Two
​ A Balanced Indulgence

with Penny Maguire

With a focus on healthy eating,  Penny will share some recipes and tips and provide nutritional information which will empower you on a healthy food journey. For the last 4 years she has been preparing food and providing nutritional support for guests at Living Valley health Retreat, in collaboration with the Naturopaths. Today's session will focus on a duck confit with side dishes, and a healthy ‘chocolate’ brownie.  Come hungry, leave inspired
(and very well fed).

Week Four
Bushfood Masterclass
​with Peter Wolfe

We will be preparing five dishes using native ingredients. Many of these will be ingredients which cannot be purchased but must be foraged in the wild. They will include fruits, nuts, herbs, vegetables and native meat and seafood. This class will give you an opportunity to learn about some of the indigenous foods found in this area and how to turn them into the delicious dishes we will then have for lunch.
